Ingredients:

  • 2 tablespoons vegetable oil or clarified butter
  • 1-2 large yellow onions, sliced
  • 1-3 tablespoons curry paste (yellow, green, red – I use Mae Ploy)
  • 1 14 to 16 oz can of coconut milk
  • 1 to 1.5 lb boneless chicken, cut into chunks (I prefer thigh meat)
  • 1 14 to 16 oz can/jar petite diced tomatoes, drained
  • salt & pepper

In a large, heavy skillet, sweat the onions and a healthy pinch of salt in the fat over medium heat until they are soft. This will take 15 to 20 minutes. Add your favorite curry powder or paste and raise the heat to medium high and fry the spices until they smell really good. Dump in the coconut milk, bring to a simmer for a couple minutes, then add the chicken. Reduce heat to medium and cook until the chicken is done. Add the tomatoes and heat through. Adjust seasoning with salt & pepper.

Serve over rice.

Serves four…or two. Depends on how hungry you are.

* Three tablespoons of Mae Ploy will have your sinuses well cleared for the following week. Start with one tablespoon for your first batch for a nice mild flavor. Two tablespoons will warm you up. :) I’m not sure how hot the yellow Mae Ploy paste is, so ymmv.
